Thai Cucumber Salad

Sweet and tangy marinated cucumber salad that's a traditional Thai side or garnish.

Directions

Ingredients

  • 12 cup Sugar
  • 1 teaspoon Thai Garlic Pepper Sauce
  • 12 cup Rice Wine Vinegar
  • 14 cup Water
  • 1 teaspoon Salt

Step 1

In a small saucepan, stir together over low heat until sugar is dissolved.

Ingredients

  • 1 Seedless Cucumber, alternately peeled in stripes then cut into 1/8" slices
  • 14 cup Red Onion, chopped into 1/4" pieces

Step 2

Cut cucumber and onion, placing them in a bowl that allows it all to be covered by marinade.
 

Step 3

Marinade cucumber and onion for 30 minutes. Too long and they'll get soggy.

Ingredients

  • 3 tablespoons Fresh Mint, chopped

Step 4

Serve garnished with fresh mint.
