Thai Style Pork Chops

Directions

Ingredients

  • 4 Boneless Pork Chops, 1 inch thick
  • 14 teaspoon Red Pepper Flakes
  • 4 tablespoons Thai peanut sauce
  • 14 cup Cucumber, unpeeled and diced
  • 6 ounces Plain Yogurt
  • 2 tablespoons Red Onion, chopped
  • 1 teaspoon Sugar
  • 2 tablespoons mint, chopped

Step 1

Preheat broiler. Combine 2 tablespoons peanut sauce and red pepper flakes, brush mixture evenly over both sides. Let stand while preparing sauce.
 

Step 2

Combine yogurt, cucumber, red onion, mint , and sugar in a bowl, mixing well.
 

Step 3

Broil chops 4 inches from heat, covered for 4 minutes, turn and cook 3 more minutes or until barely pink in the center. Just before removing from the heat, baste with remaining 2 tablespoons peanut sauce.
 

Step 4

Serve chops with cucumber sauce, garnish with mint sprigs.
