The Great Pumpkin cookies

Step 1

Preheat oven to 350 degrees.


  • 12 cup Vegetable Shortening
  • 1 cup Brown Sugar

Step 2

Combine shortening and sugar, mix with electric mixer to cream it.


  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Canned Pumpkin Puree

Step 3

Add egg and vanilla, then beat until light and fluffy. Beat in pumpkin puree.


  • 1 teaspoon Baking Soda
  • 2 cups Flour
  • 14 teaspoon Salt
  • 1 teaspoon Ground Cinnamon

Step 4

In a separate bowl, combine flour, baking soda, salt, and cinnamon. Add the dry mixture to the pumpkin mixture little by little.

Step 5

Drop rounded balls 1-2 inches apart on a greased cookie sheet.

Step 6

Bake for 10 minutes until lightly brown at the edges.

Step 7

Brush hot cookies with glaze if desired.
