Three Cheese Enchiladas

Step 1

Preheat oven to 350 degrees.


  • 3 ounces Softened Cream Cheese
  • 1 Red Bell Pepper, diced
  • 12 cup Green Onion, chopped
  • 1 teaspoon Cumin
  • 1 cup Shredded Monterey Jack Cheese
  • 1 cup Shredded Cheddar Cheese
  • 14 cup Picante Sauce

Step 2

Combine 1 cup each of jack and cheddar, cream cheese, 1/4 cup picante sauce, bell pepper, onion and seasonings. Mix well.


  • 8 8 Inch Flour Tortillas
  • 34 cup Picante Sauce
  • 12 cup Shredded Monterey Jack Cheese
  • 12 cup Shredded Cheddar Cheese

Step 3

Spoon 1/4 cup of the cheese mixture down the middle of each tortilla. Roll and place seam-side-down in 13x9 baking dish. Spoon remaining sauce over the top. Cover with remaining cheese. Bake for 20 minutes.


  • Shredded Lettuce
  • Tomato, chopped

Step 4

Top with lettuce and tomato. Serve with additional picante sauce.
