This is a new take on pizza. It's so simple, and you will love it! This tart is so easy and delicious, perfect for summer when the tomatoes are pushing like crazy. Ingredients

  • 1 pillsbury refrigerated pie crust roll
  • 2 cups mozzerella cheese
  • 5 Tomatoes, sliced or diced, you may use canned drained
  • 12 cup kraft real mayonnaise, its my preference
  • 14 cup Parmesan Cheese, grated..I use fresh
  • 2 basil pesto, recipe on my blog if you don't know how to make it, its simple
  • 4 tablespoons Fresh Basil, chopped for garnish

Step 1

Unroll pie crust on a pizza stone and brush the outer edges with water, and fold over to make a pie or pizza crust look. Prick with a fork
 

Step 2

Bake the pie crust at 450 degrees for 8-10 min. Sprinkle with ONE cup of the mozzerella cheese and let it set for 15 min on the counter or stove top. Meanwhile, lower oven temp to 375.
 

Step 3

Arrange the tomato slices over the cheese. Stir together 1 cup mozzerella cheese, mayo, Parmesan cheese, and pesto. Spread it over the tomato slices.
 

Step 4

Bake at 375 degrees for 20-25 min. Remove from oven and sprinkle with basil to garnish. This is also good with ricotta cheese dollopped on top before baking
