Tomato Bruschetta

Simple appetizer with fresh tomato and garlic



  • 4 Tomatoes, large, diced finely and drained

Step 1

Cut tomatoes and squeeze out seeds. Dice finely and place in colander. Allow to drain for 30 minutes.


  • 1 cup Fresh Mozzarella, finely cubed
  • 13 cup Fresh Basil, chopped
  • 3 cloves Garlic, medium, minced
  • 2 tablespoons Fresh Parsley, chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 12 teaspoon Fine Sea Salt
  • 12 teaspoon Fine Ground Black Pepper

Step 2

Add cheese, herbs, seasonings to tomatoes and mix.


  • 1 loaf Italian Bread, sliced 1/2 inch thick
  • 3 cloves Garlic, flattened

Step 3

After crushing garlic cloves slightly, rub bread with garlic. Toast bread on both sides under broiler or on grill.

Step 4

Serve, either by spreading tomato mixture on toast and arranging on platter, or allow guests to dress toasts themselves.
