Tortellini Sausage Soup

This is one of my families' favorite meals. It's another recipe I got from my freezer meal exchange group back when we lived in Maryland. When we have an excess of zucchini, mushrooms, yellow squash or tomatoes, we make it.

Ingredients

  • 34 pound Ground Italian Sausage

Step 1

Brown sausage, drain and set aside.

Ingredients

  • 12 cup Onion
  • 3 Crushed Garlic
  • 1 medium Zucchini, chopped
  • 1 medium Yellow Squash, chopped
  • Olive Oil

Step 2

In a large pot add garlic, onion and veggies with a touch of olive oil. Saute for 5 minutes.

  • 2 cans Chicken Broth
  • 2 cans Chicken Broth
  • 2 cans Italian Stewed Tomatoes, or several fresh tomatoes, peeled, seeded and chopped with some italian seasoning added
  • 12 teaspoon Salt
  • 3 cups Water
  • 14 teaspoon Black Pepper
  • 8 ounces Cheese Tortellini
  • Parmesan Cheese

Step 3

Add the rest of the ingredients except sausage and tortellini. Bring to a boil, add sausage, cover and simmer for 15 minutes. Add tortellini, simmer uncovered for 20 minutes or until tortellini are done. Serve topped with parmesan cheese.
