Tortellini with Prosciutto and Tomato Cream Sauce

  • 12 pound Prosciutto, cut into strips

Step 1

Slice prosciutto into strips. Saute until mildly firm. Set aside.


  • 2 tablespoons Extra Virgin Olive Oil
  • 12 cup Yellow Onion, diced
  • 2 cloves Garlic, diced
  • 12 teaspoon Fine Ground Black Pepper, to taste
  • 12 teaspoon Fine Sea Salt, to taste

Step 2

In same pan, saute olive oil, garlic, and onion until onion is soft.


  • 1 can Canned Diced Tomatoes with Italian Herbs, 28 oz.

Step 3

Add tomatoes and simmer 10 minutes.


  • 1 cup Whipping Cream

Step 4

Add cream and simmer over low heat for 15 minutes.


  • 12 cup Frozen Peas

Step 5

Add proscuitto and peas and simmer another 5 minutes.


  • 1 package Three-Cheese Tortellini Pasta

Step 6

Boil tortellini per instructions.


  • 12 cup Parmesan Cheese, grated
  • 14 cup Fresh Basil, torn

Step 7

Ladle sauce over tortellini. Garnish with Parmesan and basil.
