Tres Leches Rice Pudding

  • 1 cup Long Grain White Rice
  • 34 teaspoon Salt

Step 1

Put rice, 2 cups water and the salt in a mediumsaucepan with a tight fittinglid. Bring to a boil. Reduce to a low simmer, and let the rice cook for 15 minutes, until the water is absorbed. Remove the rice pot from the heat.


  • 1 large Egg
  • 1 can Evaporated Milk
  • 1 can Unsweetened Coconut Milk
  • 1 can Sweetened Condensed Milk
  • 1 teaspoon Vanilla Extract

Step 2

When rice is done, whisk the egg ina medium bowl, and thenwhisk in the evaporated milk. Stir the coconut milk and sweetened condensed milk into the rice, then add the egg mixture. Return the saucepan to heat and cook the mixture over a medium low heat until it looksmostly, or about 90%, absorbed. about 20-25 minutes. Stir in the vanilla then divide the puddingamong serving dishes. Keep in fridge until fully chilled, about 1-2 hrs.


  • 1 cup Heavy Cream
  • 1 tablespoon Confectioner's (Icing) Sugar
  • 1 Ground Cinnamon, to finish

Step 3

To serve: Whip the heavy cream with the confectioners sugar until soft peaks form. Dollop a spoonful of whipped cream on top of each bowl then dust with cinnamon.
