Triple Pepper Steamer Halibut

  • 2 tablespoons Extra Virgin Olive Oil
  • 4 cups Yellow Onion, Vertically sliced
  • 2 Yellow Bell Pepper, Cut into strips
  • 2 Orange Bell Pepper, Cut into strips
  • 4 cloves Garlic, minced
  • 1 teaspoon Kosher Salt, And Pepper

Step 1

Heat oil in a large non-stick skillet on medium high. Add onion, bell peppers, salt, pepper, and garlic and saute until tender (15 minutes).


  • 1 cup White Wine
  • 1 cup Fresh Basil, finely chopped
  • 36 ounces Halibut Fillet, 6 fillets
  • 2 tablespoons Fresh Oregano

Step 2

Stir in wine and herbs for 1 minute. Sprinkle fish with salt and pepper and arrange over bell pepper mixture. Cover, reduce heat, and simmer 10 minutes or until the fish flakes easily when tested with a fork.
