Tuna Steak with Romesco Sauce

The sauce is at his best when you prepare it the dat before.

Directions

Ingredients

  • 3 whole Beefsteak Tomato, Peeled, seedless and diced
  • 1 whole Red Chile Pepper, seedless, sliced into pieces
  • 1 whole Onion, small, peeled and cut up fine
  • 1 Dried Whole Bay Leaf

Step 1

Fry the onion for appr. 2 minutes. Add the tomato, chili pepper, bay leaf. Fry them for about 8 minutes.

Ingredients

  • 3 cloves Garlic, Peeled and sliced
  • 75 grams Almonds, white, roasted
  •   Olive Oil

Step 2

Roast the almonds in some olive oil. Add the garlic and fry them for about 1 minute.

Ingredients

  • 3 sprigs Fresh Parsley, Cut up fine
  • 1 slice White Bread, Light toasted

Step 3

Pu the roasted almonds, garlic, parsley and white bread into a food processor and grind it.

Ingredients

  • 1 tablespoon Dry Sherry
  • 1 tablespoon Vinegar
  •   Pepper
  •   Salt

Step 4

Add the almonds paste to the tomato sauce and add the sherry, vinegar and some water. Simmer this for another 5 minutes. Add some salt and pepper. Remove the bay leaf. Store the sauce in the refrigerator.

Ingredients

  • 4 whole Tuna Steak

Step 5

Fry or grill the tuna steaks. In the meanwhile you heat up the sauce.
 

Step 6

Serve the tuna steaks on plates together with the sauce. Serve this together with saffron rice and vennel.
