Tuna Stuffed Peppadews

Tuna Stuffed Peppadews

These colorful peppers, stuffed with tuna salad, combine sweet, salty, spicy and piquant flavors. Peppadews are small, whole sweet pickled peppers sold in markets in jars or by the pound if your market has an olive bar in the deli. Makes 15 pieces.



  • 1 can Italian Tuna, (5 oz) packed in oil, undrained
  • 2 tablespoons Mayonnaise, light is fine
  • 12 tablespoon Fresh Lemon Juice
  • 12 tablespoon Capers, finely chopped

Step 1

In a bowl mix the tuna and oil from the can, breaking up any large chunks of tuna with a fork. Stir in the mayonnaise, lemon juice and capers. Mix thoroughly until no chunks of tuna remain.


  • 15 Peppadews, drained of liquid

Step 2

Set the peppadews, hollow side up, on a cutting board. Transfer the tuna mixture to a clean quart-size food storage bag. Snip 1/2-3/4 inch wide piece from one corner to create a piping bag. Squeeze the tuna to the end of the bag near the hole and gently squeeze some of the mixture into each peppadew filling slightly over the top. Refrigerate until ready to serve.

Step 3

Note: This filling is also really good for a tuna salad sandwich.
