Tuscan Soup with Tortellini

An excellent, easy to make, hearty soup that would be perfect with warm artisan bread ie. a herbed foccacia.



Step 1

Preheat the oven to 375 degrees F.


  • 1 medium Onion, chopped
  • 2 teaspoons Garlic, chopped
  • 12 teaspoon Crushed Red Pepper Flakes
  • 2 tablespoons Canola Oil

Step 2

In a large pot, heat the oil over medium heat and add the onion, garlic, and red pepper flakes.


  • 1 can Low Sodium Beef Broth, 14.5 oz can
  • 3 cups Water

Step 3

Saute for 2 minutes, then add the beef broth and 3 cups of water.


  • 1 bag Frozen Italian Blend Vegetable Mix, 16 oz bag
  • 1 can Canned Diced Tomatoes, 14.5 oz can
  • 1 can Canned Cannellini Beans, drained and rinsed
  • 1 tablespoon Italian Seasoning

Step 4

Add all of the remaining ingredients, except the tortellini.


  • 1 bag Frozen Cheese Tortellini, 16 oz bag

Step 5

Bring to a boil, then reduce the heat and let simmer for 5 minutes. Add the tortellini and simmer until the tortellini are cooked, another 5 minutes.


  • Freshly Ground Black Pepper
  • Salt

Step 6

Season with salt and pepper, to taste. Ladle into serving bowls and serve with Herb Focaccia, if desired.
