Tzatziki is a Greek meze or appetizer that is made from strained yogurt, cucumber and garlic. Optional ingredients include herbs such as dill, mint and or parsley and lemon juice is also common. If you are feeling daring you can even hit it up with a splash of ouzo. In addition to being served as an appetizer it makes a great condiment especially when served in gyros or with souvlaki.

  • 12 cup Plain Greek Yogurt, (or strained plain yogurt)
  • 12 cup Cucumber, peeled, seeded, and shredded, squeezed and drained
  • 2 cloves Garlic, minced or pressed
  • 1 tablespoon Fresh Dill or Mint, chopped (optional)
  • 1 tablespoon Lemon Juice
  • 1 splash Ouzo, (optional)
  • Kosher Salt, to taste
  • Freshly Ground Black Pepper, to taste

Step 1

Mix everything and let chill in the fridge for an hour or more to let the flavors mingle.
