*Vegetable Beef Soup

This is such a versatile soup recipe. Substitute any meat and any veggies!

Directions

Ingredients

  • 1 pound Ground Beef, or turkey, Thawed You can substitute 1 pound of any meat in your fridge or freezer that needs to be used!
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 Onion, large
  • 3 Garlic, minced

Step 1

Add ground beef, basil, oregano, onion, and garlic into large soup pot. Stir and brown ground beef.

Ingredients

  • 6 Beef Broth
  • 3 Tomatoes, fresh, chopped
  • 1 cup Green Beans, fresh, cut in thirds
  • 3 Red Potatoes, diced (leave peel on for added nutrients and fiber!)
  • 1 cup Cabbage, chopped
  • 2 stalks Celery, sliced
  • 3 Carrots, medium, sliced

Step 2

Add beef broth and vegetables to pot and bring to a boil. Reduce heat and simmer for 30 minutes or until vegetables are tender.

Ingredients

  • 1 can Canned Dark Kidney Beans, rinsed and drained

Step 3

Drain and rinse beans and add to pot. Continue to simmer for a couple minutes while grating parmesan cheese.

Ingredients

  • Parmesan Cheese, fresh grated

Step 4

Serve with parmesan cheese.
