Walnut and Rosemary Oven "Fried" Chicken

Healthy oven baked chicken that is almost "fried" like. 287 calories per serving.

Directions

 

Step 1

Preheat oven to 425 degrees.

Ingredients

  • 14 cup Low-Fat Buttermilk
  • 2 tablespoons Whole Grain Dijon Mustard
  • 4 Chicken Breast Fillets, Thin works best

Step 2

Combine buttermilk and mustard in a shallow bowl. Add chicken to mixture and turn to coat.

Ingredients

  • 13 cup Panko Bread Crumbs

Step 3

Heat a small skillet over medium-high heat and add the panko. Cook until golden brown while stirring frequently.

Ingredients

  • 13 cup Walnuts, Finely chopped
  • 2 tablespoons Parmigiano Reggiano Cheese, Freshly grated
  • 34 teaspoon Fresh Rosemary, Minced
  • 14 teaspoon Kosher Salt
  • 14 teaspoon Freshly Ground Black Pepper

Step 4

Combine panko, walnuts, parmigiano reggiano, salt and pepper into a shallow bowl. Remove chicken from buttermilk mixture and dredge in panko mixture.
 

Step 5

Arrange on a wire rack on a large baking sheet, coat rack with cooking spray. Arrange chicken on rack and coat with cooking spray. Bake for 13-15 minutes or until chicken is cooked all the way through.
