*"What's In Our Fridge?" Skillet

Healthy Moms face it everyday. You've been there. It is 5 o'clock, and you have NOTHING. Your kids are asking you "what's for dinner?!" You are so tempted to just head for the nearest fast-food-fix... STOP!! You would be surprised at what you can make out of the simple findings in your kitchen! A great benefit of healthy eating is that more than likely, you will have fresh, healthy items (though sometimes random!) sitting around your kitchen just waiting to be combined into a new favorite dish! The other night, I found myself in this situation. I had NOTHING!! But, what started out as "nothing", quickly turned into a healthy favorite at our house.

Directions

Ingredients

  • Cooked Chicken Breast, leftover
  • Chili Seasoning

Step 1

I took the chicken and threw it into a large frying pan. I seasoned substantially with our favorite chili seasoning.

Ingredients

  • 2 small Zucchini
  • 12 Onion
  • 3 Tomatoes, fresh

Step 2

I then chopped up and added the zuchini, onion and fresh tomatoes, seasoning again with the chile seasoning.

Ingredients

  • 1 can Canned Black Beans
  • Salsa

Step 3

I opened the can of black beans, drained and rinsed them, and added them to the mix, followed by 2-3 cups of the salsa.

Ingredients

  • 1 bag Frozen Spinach

Step 4

As it simmered, I then added my frozen spinach to the mix, and cooked until the spinach had heated through.

Ingredients

  • Greek Yogurt
  • Shredded Cheese

Step 5

I placed generous scoops of the dish into bowls, and topped it with a dollop of Greek Yogurt (you could also add a little shredded cheese if you like).
