Wheatberry Salad

  • 1 cup Wheat Berries, Hard, winter variety

Step 1

Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain.


  • 1 cup Red Onion, about 1 onion
  • 1 cup Extra Virgin Olive Oil, (2 tbsp for cooking, 1/4 cup for after)
  • 2 tablespoons Balsamic Vinegar

Step 2

Saute the red onion in olive oil over medium low heat until translucent, approximately 5 minutes. Turn off heat and add remaing 1/4 cup of olive oil and balsamic vinegar.


  • 3 Scallion, minced, white and green parts
  • 1 Red Bell Pepper, small diced, 1/2 pepper
  • 1 Carrot, small diced
  • 1 Kosher Salt
  • 1 teaspoon Fine Ground Black Pepper

Step 3

In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, salt and pepper. Allow salad to sit for 30 minutes to absorb the sauce. Serve at room temperature.
