Wild Rice and Cranberry Salad

Festive. Great for picnics!



  • 6 ounces Package Long Grain and wild rice mix

Step 1

Prepare rice mix according to pkg directions, cool


  • 1 cup Dried Cranberries
  • 2 ounces Jar of diced pimento, drained
  • 4 Green Onions, chopped
  • 3 Celery Ribs, thinly sliced
  • 1 cup Fresh Broccoli Flowerets, chopped

Step 2

Combine rice, cranberries, broccoli, green onions, celery and diced pimento.


  • 12 cup Vegetable Oil
  • 18 teaspoon Black Pepper
  • 14 teaspoon Paprika
  • 14 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 3 tablespoons Sugar
  • 13 cup White Vinegar

Step 3

Sweet & Sour Dressing: Whisk together: sugar, salt, paprika, black pepper, vegetable oil and white vinegar. Chill for 1 hour.

Step 4

Add dressing (after it has chilled for 1 hour) to rice mixture and refrigerate at least 2 hours.


  • 1 cup Dry Roasted Peanuts

Step 5

Stir in peanuts just before serving
