Zucchini "Crab" Cakes (vegetarian)

We lived in Maryland for 5 years and I fell in love with crab cakes. One year I had an excess of zucchini and found a recipe for zucchini "crab" cakes that we really enjoyed. I think it is the Old Bay seasoning that takes me back to Maryland. I made some changes to the recipe to make it healthier and we love them!



  • 2 12 cups Zucchini, grated, (drain on paper towels)
  • 1 Egg, beaten
  • 2 tablespoons Butter, melted
  • 1 cup Whole Wheat Bread Crumbs, if you don't have ww bread crumbs, you can take a few slices of ww bread and put them in the blender
  • 14 cup Minced Onion, (can be yellow, white or green onion)
  • 1 teaspoon Old Bay Seasoning
  • 14 cup Whole Wheat Flour

Step 1

Mix ingredients and shape into patties. Heat oil in a pan, just coating the bottom. Fry zucchini cakes until browned on both sides.
