Zucchini Muffins/Cupcakes/Cake

This is such a healthy "cake" recipe that you could make it as muffins or even cupcakes. I'm working on a healthier frosting recipe.

Directions

 

Step 1

Preheat oven to 350 Spray 9 X 13 pan with cooking spray.

Ingredients

  • 1 cup All-Purpose Flour
  • 1 cup Whole Wheat Pastry Flour
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Coconut Oil
  • 2 teaspoons Vanilla Extract
  • 2 tablespoons Ground Flaxseed
  • 2 Eggs
  • 2 cups Zucchini, grated
  • 12 cup Dark Chocolate Chips
  • 12 cup Shredded Unsweetened Coconut
  • 23 cup Xylitol
  • 23 cup granulated fructose

Step 2

Mix all ingredients. Pour in 9 X 13 & bake for 30 minutes. Less time for muffin tins.
