Zuppa Toscana

  • 2 cups Chicken Broth
  • 1 quart Water
  • 2 large Potato, halved, sliced in 1/4 inch slices
  • 1 large Onion, chopped
  • 1 pound Italian Sausage
  • 2 slices Bacon, cooked and crumbled
  • 2 cloves Garlic, minced
  • 2 cups Kale, chopped (can substitute swiss chard)
  • 1 cup Heavy Whipping Cream

Step 1

Chop or slice uncooked sausage into small pieces. Brown sausage in soup pot. Add chicken broth and water. Place onions and potatoes and garlic in pot. Cook on medium heat until potatoes are done. Add bacon, salt and pepper to taste. Simmer 10 min. Add kale and cream. Heat through and serve.
