Do you have any recommendations for books or sites on canning fish? We had an awesome salmon fishing outing a couple weeks ago. The fillets are frozen now, but I'd love to learn how to can them.

Oh, i haven't tried to test acidity, but they are stronger than commercial vinegars that are watered down. I love the boldness of the high acidity which stands up to loads of garlic too.

Well, my red wine vinegar has been successful but white wine not so much. I wish i knew why. Perhaps oak barrels lend themselves to red but not white. I do 'cheat' and simply buy wine and make a batch. I am too impatient to accumulate leftovers, because i concur--leftovers are rare. Unpasteurized cider vinegar (Bragg or Hain) started mine.
