Mediterranean Quinoa Salad

Healthy, quick and delicious salad or side dish.

2 cups Quinoa, rinsed well
Step 1 Place the quinoa in a fine mesh strainer and rinse very well.
4 cups Water
1 teaspoon Fine Sea Salt
Step 2 Bring the water to a boil. Add the salt and the quinoa and cover. Reduce heat to low and simmer until all of the water is absorbed, about 20 minutes. Let cool, then fluff with a fork.
14 cup Orange Juice, freshly squeezed
1 tablespoon Lemon Zest, freshly grated
1 teaspoon Dried Oregano
1 teaspoon Dried Mint
1 teaspoon Dried Basil
1 pinch Fine Sea Salt, to taste
1 pinch Fresh Cracked Black Pepper, to taste
14 cup VSOP Traditional 18yr Aged Dark Balsamic Vinegar
12 cup VSOP Extra Virgin Olive Oil, your favorite single varietal evoo
Step 3 Add all of the ingredients, except the olive oil, to a small bowl. Whisk to combine. While whisking, slowly drizzle in the extra virgin olive oil. Taste, and adjust the seasonings if necessary.
12 cup Marinated Artichoke Hearts, sliced
14 cup Kalamata Olives, sliced
12 bunch Fresh Spinach, cleaned and cut into chiffonade
1 cup Cherry Tomato, cut in half
2 tablespoons Flat Leaf Parsley, finely chopped
Step 4 Add the cooled and fluffed quinoa to a large bowl. Then add all of the vegetables and herbs. Add 1/2 cup of the greek dressing and toss well to combine.
2 tablespoons Toasted Pine Nuts
12 cup Feta Cheese, crumbled
Step 5 Sprinkle with the toasted pine nuts and the crumbled feta cheese. ENJOY!
